Poached Pear


  • 4 cups water
  • 1 cup sugar
  • 2 star anise
  • 1 cinnamon stick
  • 1 vanilla bean, split
  • 2 slices orange peel
  • 4 Bosc Pears, peeled, cored, halved


  1. In a large sauce pan, combine the water, sugar, vanilla bean, spices, and orange peel until sugar is dissolved.
  2. Add pears. Cover with parchment paper to keep submerged.
  3. Bring to a simmer and cook pears for around 15-25 minutes, until a pairing knife is met with no resistance.
  4. Remove pears with a slotted spoon and allow to cool.
  5. Continue to cook the poaching liquid over medium-high heat until it is reduced by half and becomes syrupy.
  6. Serve pears with vanilla icecream and a drizzle of the syrup.
